Gluten Free Turkey Chow Mein for Chinese New Year

2015 Chinese New Year

Today is Chinese New Year.

It is the farewell of the Horse and on to a bit of confusion… they aren’t sure if it is the Year of the Sheep, Goat or Ram.  In Mandarin “horned animal” actually covers all three and that is why no-one is quite certain of really which one. And why you will hear all three.

Regardless, the Sheep is the least favorite animal of the Chinese Zodiac. It is considered a weak follower and very docile rather than a strong leader. But it doesn’t matter there will always still be a celebration, nevertheless.

And tonight my family rang in the New Year with me making a Chinese style meal, Turkey Chow Mein.

Slow-Cooker Gumbo Rice Bowl with Turkey and Andouille Sausage

I love New Orleans. It is spectacular in my opinion — the food, the atmosphere… I fell in love instantly. I was lucky enough to had traveled to NOLA twice for Mardi Gras. And even went when Mardi Gras landed on my Birthday in 1997!! Ok, did I just date myself?

Even though I haven’t been to NOLA in years, I pay homage to Fat Tuesday at my home regardless. Now of course I use to go all out and decorate, make a kings cake for dessert and even hide a plastic baby. But life is much more busier than it use to be and now all I have time for is basically cooking up dinner, LOL.

I wanted to make Gumbo — but I made a twist from the norm and made it a rice bowl instead. It might not look like much but the flavor pops once you take a spoonful!

Roasted Turkey with Sage and Rosemary

Thanksgiving all over again….

Being out of town for Thanksgiving is great and bad all rolled into one. Great because I get to see family and relax more. Bad because I don’t get to have leftovers in my fridge. Sooooooooo, I decided to make a Roasted Turkey with all the fixings for our Sunday dinner. And it literally felt like I was putting on a Thanksgiving. I over indulged on the dark meat. The sink was filled with dirty dishes and everyone at my table was stuffed from the wonderful spread.

After I picked all the meat off the bones… I cracked the bones open and am making Bone Broth to can and store in the freezer for later use. Yes, I have been busy in the kitchen today!

The turkey came out extremely moist!! It was perfect – plain and simple. I preheated the oven to 325º F placed my Raw 10.5 pound Turkey in a Turkey Roaster with a dome lid for an hour and 15 minutes, then removed the lid and baked the turkey for another 1.5 hours. I basted the turkey twice in the 2-3/4 hours I baked it.

Roasted Turkey with Sage and Rosemary

  • 10.5 pound Turkey
  • 1/2 cup butter
  • Sage
  • Rosemary

Take your butter stick and cut in half. Throw 1/2 a stick of butter into the cavity of the bird with a good, liberal sprinkle of sage and rosemary. Take the other 1/2 of the butter and place into a microwave safe bowl with more sage and rosemary. Place in the microwave for 45 seconds or until melted. Stir to combine and brush all over the top of your turkey.

Put the turkey on a rack in a large covered roasting pan, and into the oven and bake at 325° for 2-3/4 hrs or until a meat thermometer reads 170° for the turkey.  After 1 hr remove the lid, baste the turkey, return to the oven leaving the lid off to let the heat crisp the skin for the next 1.5 hours.

Turkey Tenderloins in a sweetened sage mushroom sauce

Turkey Tenderloins in a sweetened sage mushroom sauce

I am trying to me mindful and use what I already have in the freezer. I am literally getting bored of food at the moment. Or maybe I am just too tired to cook. Let’s see – I volunteer at my kid’s school twice a week. My daughter is in Girl Scouts and we do something with the Troop at least once a week. I do PTO once a month. And then the rest of the time I am playing catch up with dishes or laundry or both at the same time all the while refereeing my children and trying to keep my sanity.

And on top of everything I have to have dinner ready for when my husband gets home from work so so we can sit down and eat as a family  – well not immediately. But at least with in 20 minutes of him getting home. We usually eat anywhere between 6:30 or 7 every night.

Nevertheless, I scoured the cupboards and grabbed a can of Gluten Free Cream of Mushroom soup and a can of Condensed Milk and said — I can definitely make a gravy with these two ingredients and the rest is sweet history. Think of a sweet sage sauce taken up a notch.

Gluten Free Taco Salad

I love Taco Salad… it is one of my go to meals for my family — because it is quite quick to whip up and very simple as well.

Gluten Free Taco Salad

Gluten Free Taco Salad

Gluten Free Taco Salad

I made my own tortilla strips for this salad because I didn’t have any Tortilla Chips on hand. So I sliced up about 5 corn tortillas and then fried them up to a crisp.

Ingredients

2 ripe tomatoes, diced
1/2 pound sharp Cheddar, shredded
1 large onion, diced
1 head green leaf lettuce, washed, drained and shredded
1 pound lean ground turkey or beef, browned, crumbled and drained
Can Black Beans, drained
2 TBSP Trader Joe’s Taco Seasoning

Optional toppings

Sour Cream
Sriracha sauce
Gluten Free Tortilla Strips

Brown meat, beans and onions together with the Taco Seasoning until thoroughly cooked. Then combine everything together in a large salad bowl. Just before serving, add the taco chips, tossing to combine with other ingredients. Top each serving with a dollop of sour cream drizzled with Sriracha sauce to taste and some tortilla strips.

Not So Classic… Gluten Free Turkey Pot Pie

I had no idea what I wanted to make for dinner. But then I thought — I just bought some Turkey Tenderloins — maybe I can make something with those…. BUT WHAT??? And then I thought Turkey Pot Pies!!! It is fall, the weather is cooling down — so why not make some comfort food for tonight.

    • Kosher salt and freshly ground black pepper, to taste
    • 1/2 cup cornstarch
    • 3 large eggs, beaten

FOR THE SWEET AND SOUR SAUCE
  • 3/4 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup ketchup
  • 1 tablespoon gluten free soy sauce

INSTRUCTIONS

  • To make the sauce, whisk together sugar, vinegar, ketchup, and soy sauce in a sauce pan and cook until sauce thickens.
  • In a large bowl, season Turkey with salt and pepper, to taste. In another bowl beat cornstarch and eggs together. Dip the Turkey into the egg mixture.
  • Heat vegetable oil in a large saucepan or wok. Add Turkey and cook until golden brown, and cooked through. Transfer to a paper towel-lined plate; discard excess oil.
