Review: Caffe Gelato Restaurant (Newark, DE)

I visited Caffe Gelato with my kids to try their Artisan Crafted Gelato, and we were not disappointed!

We were spoiled for choice with so many delicious gluten-free flavors, including:

  • Salted Caramel
  • Stracciatella (chocolate chip)
  • Dark Chocolate
  • Raspberry Sorbetto
  • Vanilla Bean
  • Mint Chocolate Chip
  • Bacio (chocolate hazelnut)
  • Peanut Butter
  • Pistachio
  • Caramel Cashew Crunch
  • Crème Brûlée Toffee

I had the Crème Brûlée Toffee, which was really tasty. Portions are on the smaller side, but the flavor is big.

My daughter chose Salted Caramel, and my son went with Mint Chocolate Chip. We all tried each other’s flavors and agreed everyone picked the right one—though, naturally, I still thought mine was the best! When I asked, I was told all flavors are gluten-free, which was perfect for us.

The gelato is served in cones or cups; since we are gluten-free, we opted for cups. While the service was fair but not excellent, the quality of the gelato more than made up for it.

Gluten Free No-bake Peanut Butter Oreo Pie

If you are craving something sweet and want something that takes little work putting it together, then this recipe is just what you are looking for!

Anyhow, easter is a time when I love trying new recipes and seeing if the family approves.

While they said the Peanut Butter Oreo Pie was very rich, they all loved it!

So I say that is “yes vote!” for it being oh so yummy!!

Gluten Free Peanut Butter and Jelly Grilled Sandwich

Have you ever been to Disneyland and eaten dinner at Goofy’s Kitchen? One of the items they have on their buffet menu line is PB&J Pizza. While my kids and I couldn’t eat it I made it at home on Udi’s Pizza Crust. It was really good! Warm, melty goodness! And this is coming from someone who really isn’t a big fan of PB&J sandwiches.

Now fast forward a year and a half… I was making everyone roast beef sandwiches except for one of the kids they wanted a PB&J sandwich instead. I took out the panini grill so I could make the Roast beef sandwiches and then said, “Can I put your PB&J on the panini grill, also?” and my kid was like, “Sure.”

Well the other two kids seemed to be jealous and all I could hear was, “Can I have a bite to try your sandwich?” “This is sooooooo good!”

Anyhow, a new sandwich was born in our home, LOL.

Gluten Free Peanut Butter Cookie Dough & Brownie Five Layer Cake | Small Town Living in Nevada

My parents watched my children, home and animals while we were in Maui for a week. Since my mom’s birthday is next week and since my parents wouldn’t be in town the kids and I wanted to celebrate my mother’s birthday before they headed back home.

My mom wanted me to make sushi for dinner as did my daughter and husband. They said I make sushi better than any restaurant. So who can say no to that? Also, my mom had stumbled  across a recipe for a Peanut Butter Cookie Dough Brownie Layer Cake recipe awhile back in her Facebook news feed and wanted to know if I could convert it to Gluten Free so I could make it for her birthday.

Well of course I can… but it never displays as great as the professional photos that are displayed on most Blogs. However, it came out really tasty!

It has three layers of brownie layered between two layers of peanut butter cookie dough (eggless of course) for a total of five layers then smothered in a dark chocolate ganache — yeah, total sugar overload! After a few bites I had to down a glass of cold milk!

This cake was relatively simple to make and put together.

Once you have the brownies baked and cooling you want to make the eggless cookie dough.

To glue the brownie layer to the cookie dough layer that is where the chocolate ganache comes into play.

And then you just frost the top of the cake with the remainder of the ganache and then add some peanut butter frosting swirls and mini chocolate chips for decoration! That simple.

Gluten Free Peanut Butter Chocolate Chip Waffles

After I came home from volunteering in my older son’s class at school today I made my younger son and I Gluten Free Peanut Butter chocolate chip waffles topped with syrup and plum jelly for lunch.

I had made a waffle for my older son earlier that day because there was a birthday celebration for a classmate that brought waffles as her treat. Of course my kids can’t participate in class treats since most things brought in are riddled with gluten. So I made him a Gluten Free Waffle so he wouldn’t be left out on the celebration.

Well that afternoon, the younger one said he wanted a PB&J sandwich and I suggested a PB&J waffle instead. Sounded like a good idea since I had mix leftover. Why have it go to waste, right?

So I added peanut butter to the mix and then baked the mixture on my belgian waffle maker.

81xgeejUBEL._SL1500_I had never tried Hodgson Mill’s Gluten Free Pancake & Waffle Mix before and was eager to open the package I was graciously given. I couldn’t wait to taste how it turned out especially since it was a Non GMO product as well.

I was happily surprised to see the mix was made with whole grains and didn’t have any sugars or sweeteners added to the ingredients. The waffles I made with this mix were good. A little drier – but probably cause I added a thick peanut butter — and nothing syrup and jelly couldn’t fix. The taste was nice with a slight nutty flavor.  And the texture was perfect, too. Even my kids liked them which was a bonus.

Gluten Free Peanut Butter Chocolate Chip Waffles

Ingredients:

1-1/2 cups Hodgson Mill’s Gluten Free Pancake & Waffle Mix*
1 Cup Milk
1 Egg
3 Tbsp Oil
1 Tbsp sugar
2 Tbsp peanut butter, smooth
1/4 cup chocolate chips

Syrup to taste
Jelly to Taste

Place Hodgson Mill’s Gluten Free Pancake & Waffle Mix with Milk, egg, oil, sugar and peanut butter. Mix until smooth. Add chips and fold in.

Pour into a preheated waffle iron. Bake 6-8 minutes until golden.

* Mix ingredients: Whole Grain Sorghum Flour, Brown Rice Flour, Milled Flax Seed, GDL, Corn Starch, Sodium Bicarbonate, Xanthan Gum, Flake Salt.
