Juicy Gluten Free Cheese Stuffed Turkey Burgers

 

My husband wanted me to make homemade turkey burgers for dinner. I have to say I love turkey, but never have been a fan of Turkey Burgers since more than likely they come out very dry.

I told him I would try my best to make a juicy burger and I have to say it was VERY JUICY and VERY TASTY!! I A-MAZED myself, LOL!

Who would have thunk? I will definitely be making these tasty burgers again for the family!

No-bake Gluten Free Raspberry Cheesecake in a Jar

My husband has been having a huge sweet tooth lately and has been asking me to try new desserts. He saw a recipe for a Strawberry Cheesecake in a Jar and wanted to know if I could do my magic and make it food friendly for our family. He even went as far and bought a basket of raspberries too!

Nevertheless… I worked my magic and came up with a pretty good recipe I think. And it was tasty too!!

Gluten Free Creamy Lemon Pie

My husband saw a recipe in a magazine of this really yummy looking Creamy Lemon Pie and hinted at wanting me to make it for him. Since Father’s Day was around the corner, my daughter and I decided to make it as our dessert for Father’s Day.

It had a silky consistency like ice cream yet it had a nice lemon flavor! Not overpowering lemon flavor at all!

We made the gluten free graham cracker crust since I have no idea where to find one in the stores around here.

Nevertheless, it was a nice ending to a long day.

Gluten Free Beer Batter Fish with Tartar Sauce

Since I fried up the yams the other night I didn’t want to waste the oil so I decided to make Beer battered Fish AND onion rings! And boy were they oh to yummy!! So glad I did!
But if you have fried fish you totally want something to dip and Tartar sauce is a great dipper for your fried fish. My husband isn’t into Tartar sauce but her tried it nevertheless and said he really liked what I made and actually dipped his fish with every bite!

Gluten Free deep fried yam with cinnamon butter

If your arteries weren’t clogged already this will definitely help!

My husband went to Ruby River Restaurant and wanted to see if I could replicate their Jacketed Cinnamon Yam they served at the restaurant. Anyhow, I made a gluten free version and have to say it was really tasty! My husband loved it so much that he ate a whole yam and didn’t even touch his Tri-Tip!

Finally planted the garden

I am tired and dirty, but my garden is finally in. I have some bare spots, but hoping the cantaloupe, pumpkins and watermelon will fill in the gaps.

I planted seeds back at the beginning of April and kept them happy in the greenhouse. The seedlings were getting way too large for their containers and decided this weekend was a good day to finally plant them in the ground.

Mild Curry Seasoning Rub

I wanted a nice salad for dinner last night. Basically I wanted something light and not so heavy for a meal and a salad sounded great for what I wanted. Of course I added shrimp and wanted a nice kick so I made a curry rub to season the shrimp with. Yep, my salad was perfect and the kids said they LOVED it as well!

Anyhow, all you want to do is sprinkle this rub onto shrimp, chicken or pork five minutes before grilling or sauteing to maximize your flavors and then go from there!!

Gluten Free Fusilli with seasoned beef and alfredo sauce

Tonight I wanted to keep it simple and pasta seemed an easy bet. I was at the Grocery Outlet awhile back and they were selling Gluten Free pasta that I decided to try.

They had Explore Asian’s Organic Thai Brown Rice Pasta Fusilli. I couldn’t resist and grabbed a bag to eventually try. Tonight was the night! It is simply made from Organic Thai Brown Rice, Organic Tapioca Flour and water.

It was very tasty to say the least and went well with the seasoned beef and alfredo sauce!

I have been neglecting my blog…

Here are several reasons….

  1. In January I was diagnosed Vitamin D deficient. All I wanted to do was sleep 24/7.
  2. My youngest Son started Little League on top of my older Son being in Cub Scouts and my Daughter being in Girl Scouts – I AM OVERWHELMINGLY BUSY!!
  3. My Vitamin D deficiency makes me feel like a walking zombie. I unfortunately haven’t wanted to cook, bake or do much. And when I do, I HAVE to force myself.

So in essence I haven’t had the energy to do much and that included keeping up on my Blog.

Does that mean I am going to stop posting? Of course not! I will post when and as often as I can.

I just wanted to let you all know why my Blog slowed down, and I apologize.

Gluten Free Butterbeer Cake

My parents were coming to visit last week so my family could celebrate my Mother’s birthday on Friday. I decided that I was going to try making her a 4-layer Butterbeer Cake. Of course I don’t think she has ever seen Harry Potter, but I didn’t care.. I so wanted to make this moist cream soda and butterscotch infused cake regardless!
