Gluten Free Pizzelle Cookies

I have had my pizzelle maker for years and today was the first time I decided to try it out and so glad I did!!

I knew the kids have been wanting ice cream. And since it was a warm spring day I decided I wanted to make these delicate waffle cookies and see if I could make them into ice cream cones.

HOWEVER, I guess if you don’t have a cone roller it isn’t that simple — so I improvised instead, LOL!

Nevertheless, while the pizzelles are still hot you can form them into dessert cups, cannoli shapes, or cones and fill them with anything you want.

And depending on the ingredients and method of preparation the cookies can be crispy or soft and chewy.

Homemade Hot Fudge Sauce

When I was making my Gluten Free No-bake Peanut Butter Oreo Pie I wanted to make my own homemade fudge sauce to use in the recipe instead of buying a jar at the store.

So I got out a bag of semi-sweet chocolate chips and a can of Sweetened Condensed Milk to get started.

This recipe is wonderful in recipes, drizzled over ice cream, fruit, pie whatever you want it for!

Gluten Free No-bake Peanut Butter Oreo Pie

If you are craving something sweet and want something that takes little work putting it together, then this recipe is just what you are looking for!

Anyhow, easter is a time when I love trying new recipes and seeing if the family approves.

While they said the Peanut Butter Oreo Pie was very rich, they all loved it!

So I say that is “yes vote!” for it being oh so yummy!!

Homemade Rocky Road Fudge

I love cooking and baking — and making homemade candy is no exception. I tried something a tad different this year and decided to make fudge and place it into my Easter egg shaped molds.

It is firm, yet soft and oh so yummy with the marshmallows and pecans.

Gluten Free Homemade Beef Gravy

Here is a very simple recipe to make a great tasting beef gravy. You can use it over Steaks & mashed potatoes, Loco Mocos OR whatever you love gravy on!!

And if you want to jazz it up… you can sautée fresh mushrooms and add to the gravy and serve over breaded cube steaks or even a juicy ribeye… there are endless ways to use this wonderful gravy!!

Gluten Free Homemade Beef Gravy

Ingredients:

  • 2 Tablespoons Beef Base (I like Better Than Bouillon)
  • 2 Cups Water
  • 1 Cup Butter
  • 2 Tablespoons Arrowroot or Cornstarch

Directions:

  1. In a small bowl dissolve Beef Base into Water. Set aside.
  2. Next melt butter in a saucepan over medium heat. Add Arrowroot and whisk together, making sure to get all visible lumps out.
  3. Turn heat to low and SLOWLY add broth, stirring constantly.
  4. Turn heat back up to medium and continue stirring until gravy boils and thickens.

Rainbow Classroom Party

I am the “Party Mom” for my daughter’s classroom. I basically come up with Party ideas and then implement them… well today we are having a Rainbow Party!! I hope it goes well… I even made Fruit and Veggie trays this morning from a generous donation. I think I will need to have the classroom write a thank you note!!

Anyhow, here is my attempt at putting together a colorful tray or two!

On the trays are a variety of fruits like Watermelon, Grapes, Strawberries, Honeydew, Cantaloupe, Pineapple, Bananas, Mangoes and then a nice selection of veggies like Carrots, Celery, Green Bell Peppers, Broccoli, Cherry Tomatoes,  Olives.

Homemade Gluten Free Flour Blend

I find that buying pre-made all purpose gluten free flour is very expensive at the store per pound so I basically make my own.

Also, living at an altitude of 4,750 elevation requires a little more protein in my mix to help with that sponginess you would get from all Wheat Flours.

When I make my flour blend I love using Teff Flour as one of my blends. It is high in protein — which most GF Flours lack.

I also prefer using Bob’s Red Mill brand and tend to go with that brand when making my blend.

Gluten Free Baked Garlic Whitefish

I am a huge fan of whitefish. The milder the flavor, the more I LOVE it! And this is probably because I am not a lover of a strong fishy flavor — like you get from Tilapia or Salmon. Normally I don’t eat a lot of raw fish even in sushi because my husband prefers cooked sushi rolls. Despite his liking, I bought salmon from Costco to make sushi rolls and it was fantastic raw! It melted in your mouth.. and literally didn’t even have much of a fish flavor at all! Nevertheless, you cook Salmon, I won’t like it at all — the flavor turns me off. YUCK!

Anyhow, like I said, I love whitefish be it swai, cod, halibut, haddock, swordfish, etc… it is all yummy!!

Let me get back on track — A couple of months ago I was experimenting with making flavored butter to place on my fish. And that night I made a wonderful garlic butter with nice minced garlic and dried parsley! It was wonderful. In fact, I think I didn’t make enough because my husband was asking for more — and I had just made enough for 5 meals!!

Homemade Gluten Free Turkey Nuggets

A couple of weeks ago I cut up a raw turkey and used one of the turkey breasts to make Gluten Free Turkey nuggets served with my cranberry dipping sauce!

I dredged the nuggets through egg and a gluten free bread crumbs mixed with smashed Ruffles potato chips as my breading. Yep, it was a tasty concoction!!

Homemade Gluten Free Egg & Sausage breakfast sandwich

Like I have said before, I love sandwiches and that includes breakfast as well. If you are short on time and have 15 minutes to spare you can definitely make this breakfast sandwich in 15 minutes or less! And it is a good hefty serving with 2 eggs and 2 sausage patties!! You might even be nicely stuffed after eating this bad boy!

For convenience, I love using the microwave to cook my eggs in a ramekin. And I have to say it comes out like an Egg McMuffin style egg – so SCORE!

And of course you can definitely make several of these sandwiches ahead of time and freeze them up for later meals!! Whatever your fancy….
