Homemade Gluten Free Egg & Sausage breakfast sandwich

Like I have said before, I love sandwiches and that includes breakfast as well. If you are short on time and have 15 minutes to spare you can definitely make this breakfast sandwich in 15 minutes or less! And it is a good hefty serving with 2 eggs and 2 sausage patties!! You might even be nicely stuffed after eating this bad boy!

For convenience, I love using the microwave to cook my eggs in a ramekin. And I have to say it comes out like an Egg McMuffin style egg – so SCORE!

And of course you can definitely make several of these sandwiches ahead of time and freeze them up for later meals!! Whatever your fancy….

Gluten Free BLT with Avocado and Scrambled Egg

I love breakfast sandwiches. Ok I love sandwiches in general. But, the combination of flavors and textures in this sandwich are awesome and jazz up a boring BLT any day.

Normally I love this with a fried egg but decided to make a less messy version and use a scrambled egg instead. Regardless of how you like your egg — this is the breakfast sandwich for you.

Udi’s Gluten Free Ziti & Meatballs – Review

I was very delighted tonight to finally try Udi’s Gluten Free Ziti & Meatballs Frozen entree tonight.  I even got two thumbs up from my husband who is very finicky!!

1943Nevertheless, I bought 3 bags since an 18oz  bag only contains two servings. I tossed all 3 bags into a large glass bowl and placed it into the microwave for 10 minutes. When the buzzer went off I stirred gently as to not to break the ziti and then placed it back into the microwave for another 10 minutes.

The aroma in the kitchen smelled like I had been making sauce all day long! My husband at first was leery and had an “OMG what is for dinner look on his face?”

One bite in he said he LOVED this meal, ate 3 helpings and told me I needed to stock up on more bags!!!So I would say he like it, LOL!!

And of course, I love easy meals like this when I have a busy day due to the kids being in Scouting. And having it ready in 20 minutes is perfect. The price was roughly $8.00 at Walmart the last time I saw it, but I bought these bags at the Grocery Outlet today for $2.49/bag which is a fantastic price especially when you are buying 3 bags to feed a family of 5. AND there was at least one helping leftover for lunch tomorrow!

All in all, Udi’s Gluten Free Ziti & Meatballs  was great tasting, easy to prepare and no one squawked over not wanting to eat. Everyone left happy and satisfied.

I will be going back to the Grocery Outlet tomorrow to see if they have any more on the shelf so I can stock up!!

Sometimes you just get bored from the same over and over traditional red sauce and pepperoni but kicked it up with Pesto and Turkey – I promise you’ll like it!

Gluten Free Ground Beef Taco Salad

The ingredients in this salad are very simple, nothing fancy, yet still taste marvelous together.

I am a huge fan of Taco Salad. And Mexican food is one of my favorite food styles aside from Asian food. I probably cook Mexican cuisine at least once a week since I love it so much!

And a bonus — This meal can be prepared in 30 minutes or less!

Gluten Free Homemade Macaroni Salad

So I use to like L&L’s Hawaiian Barbecue. Ever since I found out I was allergic to chicken and gluten, I haven’t eaten there in years. This Macaroni Salad recipe is a copycat version of their mac salad. It is so tasty that my husband LOVED it and kept raving to people how great it was. Now that made me a happy cook that is for sure!

So, so busy!

So on Monday my husband and I packed the car, then the kids and ourselves into the Prius and drove 400+ miles to Anaheim to visit Disneyland. We normally would stay for 3 days at the parks, but decided to save money and bought two-day park hopper tickets this time instead. Uh, having two days seemed very rushed. And even though we didn’t make it onto every ride we had planned, the kids still had an awesome time!

Once we arrived into town we went to Walmart and bought lunch supplies and dinner supplies for one night. Even though the food is quite tasty at Disneyland, and being gluten intolerant isn’t even an issue — the only food we purchased inside the park was a Dole Whip cause you can’t go to Disneyland without having a Dole Whip!

Gluten Free Alfredo Sauce

My family isn’t really into traditional tomato pasta sauce… we love Alfredo Sauce. Tonight I threw together what I had in the fridge and every person at my table raved and my youngest even had 2 helpings of pasta… this is a kid who HATES pasta night. So I will take that as I did really well.

Crockpot Leftover Meatloaf Stuffed Bell Peppers

So I made meatloaf the other night for dinner and over estimated HOW MUCH I was making. I normally make a one pound loaf, but for some odd reason I figured I should make a two pound loaf. WELL… lets say I had a lot of meatloaf leftover.

Now, my wheels were spinning on what to do with the leftovers. I love stuffed bell peppers and immediately figured I could transform the meatloaf into stuffed bell peppers easily especially since I had leftover rice in the fridge as well.
