Gluten Free Lemon Cereal Bites

gluten-free-lemon-cereal-bites

My daughter’s best friends mother made the Chex™ Lemon Buddies one day and they were REALLY good. A nice sweet lemony tasty snack. Today I decided I would try my hand at them. But of course I have to always do my own little twist on things. Nevertheless, the kids said they were good so that is all that matters, right?

5 places where to eat Gluten Free in New Orleans

1. Felix’s Restaurant and Oyster Bar

This slideshow requires JavaScript.

My husband and I headed over to Felix’s Restaurant and Oyster Bar that is located on Iberville St one afternoon.

I asked the waitress if they had a “Gluten Free” menu. Although she said no, she pointed out many of the grilled items were GF.

Nevertheless, I ordered their Blackened Louisiana Alligator as an appetizer and their Blackened Gulf Shrimp for dinner.

Oh my goodness!! The Alligator was spectacular and the Shrimp was cooked to perfection! The Blackened spice was flavorful and not too over powering to the point that I over ate and waddled myself on out the door!!

It definitely isn’t the fanciest place around but the food was really tasty and the service was great. AND your meal was out quickly, so you didn’t have to wait forever and a day to eat your meal.

Anyhow, if I have time on my schedule, I may try and head back over to try something else out on their menu.

Our summer…

So I have been lacking in posting the last month or so, because I have been having fun traveling, spending time with my family, nursing a cat back to health and just living life!

13332827_10207968411702138_6101829135946033054_n

At the beginning of June our older cat Baxter caught a baby bunny and when he noticed that I saw him, he released the little baby. We tried to nurse her back to health but I was saddened that I couldn’t have done more for her. The kids instantly named her Cotton — but Cotton couldn’t keep hydrated, unfortunately. It was emotionally hard seeing such a small creature so helpless and in pain. We tried for 4 days administering formula, water, and pedilyte to keep her going, but either she was too young and tiny or just too hurt from the cat that she ended up taking her last breath. The kids and I dug a hole in our flower garden and buried her amongst the blooming flowers. My daughter even painted a rock as a head stone to go on top of the grave. In those 4-½ days that little bunny stole our hearts!

RIP Cotton, I hope your pain is gone & you are hopping around and feeling better tiny little bunny. I’ll see you again at the rainbow bridge!!

Then…. I and I say this in a good way, God has a weird sense of humor. So our lil bunny died and a week later this big domestic bunny ends up in our yard!!

We assumed it was someones in the neighborhood and not wanting it to be harmed, the kids, a neighbor and I catch the rabbit in our backyard and place him in an empty rabbit cage that we have.

The next day Alexandria, Arik and I went door to door looking for the owner of the rabbit. No one claimed they were missing a rabbit. I then was talking to Dave my next door neighbor and he stated that the people who moved in around 6-weeks ago next to him found 2 domesticated rabbits in their garage and basically released the rabbits out in the yard. If this was one of those rabbits, this angers me that this rabbit was abandoned twice!! AND none of this was told to me when I asked said neighbor if they were missing a rabbit. Nevertheless, we ended up keeping this rabbit. And he has been an awesome addition to our family. Tame, beautiful and the kids have fallen in love with him.

Gluten Free Seasoned Salt

Seasoned Sprial Fries

When I make burgers, french fries or even spiral fries I love to season them with my homemade seasoned salt. It just makes them that much more tastier than using just plain salt! I actually had an old season salt spice jar that I reused for my concoction and didn’t even need to make a label for, score!

Gluten Free Seasoned Salt

Ingredients:

1/4 cup salt
2 tablespoon sugar
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon arrowroot

Directions:

  1. Combine all ingredients in a medium bowl and mix thoroughly.
  2. Pour blended seasoned salt into an empty spice bottle with shaker top to store.

Thousand Island Dressing

My husband and my kids LOVE Thousand Island Dressing. I had made taco salad, but when I went to grab the Thousand Island Dressing I realized I was all out of it!!

So in a pinch I made homemade and everyone said it was really yummy. Score! I might be making the Thousand Island Dressing from scratch from here on out!

Luna Bar & Luna Protein – Review

So I was sent a box with Gluten Free Luna Bars & Gluten Free Luna Protein Bars to Review a while ago. I have just now finished the variety of bars that I was sent. And while some were better than others I have to say I was quite surprised at how tasty these bars were.

Since I am gluten intolerant these bars were a nice change from all the so called chewy gluten free bars out there.  Not only did I liked the bars, my kids as well as my husband loved every bar we tried. They are more like a dessert bar than a granola bar… but the bars aren’t overly sweet. AND they were filling and didn’t leave you hungry afterwards – most likely due to having a lot of protein per bar.

My absolute favorite was the Lemonzest bar to my surprise. It smelled wonderful and tasted just as good. I liked its Protein Grain Blend that was made from Soy Protein Isolate, Organic Rolled Oats, Organic Rice Flour, Organic Roasted Soybeans, Organic Soy Flour, and Organic Milled Flaxseed. AND the Organic Lemon Juice Concentrate in the bar wasn’t too overwhelming and overall it was just a really tasty creamy lemon snack.

Lemonzest

The Luna Bars are Gluten free and non-GMO and some are made with with organic dark chocolate and oats while the Protein Bars are Gluten Free and a lot higher in protein than the regular Luna Bars.

I definitely will be buying Luna Bars when I have a craving for something sweet.

Gluten Free Ham & Swiss Quiche

Not too long ago I was at the Grocery Outlet and came across a Gluten Free Pie Crust by Silly Zak’s in the frozen section and the first thing that came to mind was Quiche!! So I made 2 Gluten Free Ham & Swiss Quiches and literally had eaten it every day for breakfast since I LOVE IT SO MUCH!!

Yeah the crust was that good that I had to go back to the store and buy a few more to keep in the freezer.

Nevertheless… this quiche was nice and fluffy, the crust was sweet and flaky and the egg, ham and swiss were oh so yummy!

Gluten Free Baked Turkey Breast

Several times a year I defrost a whole turkey, separate the meat from the bones and make at least 5 meals depending how large the bird weighs.

I can definitely feed my family of 5 on a nice large Turkey Breast and have everyone satisfied when they leave the table.

No-bake Gluten Free Raspberry Cheesecake in a Jar

My husband has been having a huge sweet tooth lately and has been asking me to try new desserts. He saw a recipe for a Strawberry Cheesecake in a Jar and wanted to know if I could do my magic and make it food friendly for our family. He even went as far and bought a basket of raspberries too!

Nevertheless… I worked my magic and came up with a pretty good recipe I think. And it was tasty too!!

Gluten Free Creamy Lemon Pie

My husband saw a recipe in a magazine of this really yummy looking Creamy Lemon Pie and hinted at wanting me to make it for him. Since Father’s Day was around the corner, my daughter and I decided to make it as our dessert for Father’s Day.

13443179_10208070033442618_3208181029271083522_o.jpg

It had a silky consistency like ice cream yet it had a nice lemon flavor! Not overpowering lemon flavor at all!

We made the gluten free graham cracker crust since I have no idea where to find one in the stores around here.

Nevertheless, it was a nice ending to a long day.
