Gluten Free Patty Melt Panini Style

I was battling the what should I make for dinner question until the last minute when I decided it was a burger kinda night. And then proclaimed it was even better — a patty melt kinda night! I love grilled onions… So having an excuse to sauté some up is heaven.

INGREDIENTS:

  • 1 onion, sliced into 1/4″ rings
  • 5 (1/4 lb) ground beef patties
  • 10 slices gluten free bread (I used Udi’s)
  • 10 slices swiss cheese
  • 5 tablespoons thousand island dressing
  • 1 tablespoon Olive oil
  • Salt and pepper
  • Butter

DIRECTIONS:

Preheat panini grill to medium-high heat (375°F).

Add olive oil and 1/2 Tbsp of Butter into a large nonstick skillet over medium-high heat. Once oil is hot, add onions and sauté until browned, about 8 minutes.

Remove onions from pan and set aside. In same pan, fry the hamburger patties for 3 to 4 minutes until very browned on one side. Flip and continue cooking the other side for another 3 minutes. Remove from pan.
Assemble the patty melts:

Butter one side of your bread. On other side top bread with a slice of cheese, onions, the burger patty, thousand island and a final piece of bread.

Grill your sandwich until golden and the cheese melts, about 2-3 minutes. Repeat for each burger.

How to make your own deli style Roast Beef

Roasted Beef

My husband loves Roast Beef sandwiches, yet hates not being able to find rare roast beef from the delis around our small town. SO we went to Raley’s and bought a 16 pound top round roast with the cap on –  We paid $3.99/lb, that is half the price than what any deli would sell sliced roast beef for per pound.

He took the Roast and rolled it in twine, then brined it for several days with a salt rub. Then when it was ready — he washed the brine off and put a marinade rub on — a smoky chipotle rub which he left on to marinade for a couple of days….

After his meat was seasoned, he smoked it on the Traeger Wood Pellet Grill and then grilled it to a perfect rare.

Gluten Free Egg Muffin Sandwich

I decided to make the kids and I Egg Muffin Sandwiches this morning for breakfast since I had come across a package of Ener-G English Muffins at the grocery store. I love English Muffins and have really missed having an English Muffin since we had to go gluten free over a year ago.  And well… plus, I love Eggs Benedict.. Egg Muffins, and the list goes on. I have to say the English Muffins were more like a croissant than an English Muffin — which is perfectly fine. I love croissants so it was great. I cut the roll in half then toasted them in the toaster and it worked out perfectly. This could probably be a great roll for Turkey Salad Sandwiches as well… hmmm sounds like I might have to try that sometime soon. Egg_Sandwich

Ingredients

  • 1 Ener-G English muffin split and toasted
  • 1 egg
  • 1 slice of American cheese
  • 1 slice of deli ham

Directions

  1. Take a microwave-safe greased ramekin place a slice of ham in the ramekin then crack an egg on top of the ham.  Place ramekin in a ziploc bag (in case egg explodes in microwave) and place container in the microwave and cook for 45-60 seconds until all the liquid is cooked off and egg is cooked through.
  2. When the egg is ready, place it on top of the bread and top it off with cheese and the other half of the bread.  The egg will be hot and will melt the cheese.

Turkey Salad Sandwich

I roasted up a turkey breast and two drum sticks the other night. I have a habit of always making Turkey Salad out of the leftovers… or even Turkey Pot Pies. Today was definitely a Turkey Salad Sandwich kinda day.

Turkey Salad

Ingredients:

4 cups turkey (boneless, skinless), diced
1/3 cup green onions, tops only – diced
2/3 cup cranberries
2 celery stalks, diced
2/3 cup mayonnaise
Salt and pepper to taste

In large bowl, stir together all ingredients until well mixed, adding salt and pepper to taste.
