Gluten Free Baked Garlic Whitefish

I am a huge fan of whitefish. The milder the flavor, the more I LOVE it! And this is probably because I am not a lover of a strong fishy flavor — like you get from Tilapia or Salmon. Normally I don’t eat a lot of raw fish even in sushi because my husband prefers cooked sushi rolls. Despite his liking, I bought salmon from Costco to make sushi rolls and it was fantastic raw! It melted in your mouth.. and literally didn’t even have much of a fish flavor at all! Nevertheless, you cook Salmon, I won’t like it at all — the flavor turns me off. YUCK!

Anyhow, like I said, I love whitefish be it swai, cod, halibut, haddock, swordfish, etc… it is all yummy!!

Let me get back on track — A couple of months ago I was experimenting with making flavored butter to place on my fish. And that night I made a wonderful garlic butter with nice minced garlic and dried parsley! It was wonderful. In fact, I think I didn’t make enough because my husband was asking for more — and I had just made enough for 5 meals!!

Homemade Gluten Free Turkey Nuggets

A couple of weeks ago I cut up a raw turkey and used one of the turkey breasts to make Gluten Free Turkey nuggets served with my cranberry dipping sauce!

I dredged the nuggets through egg and a gluten free bread crumbs mixed with smashed Ruffles potato chips as my breading. Yep, it was a tasty concoction!!

Gluten Free Ground Beef Taco Salad

The ingredients in this salad are very simple, nothing fancy, yet still taste marvelous together.

I am a huge fan of Taco Salad. And Mexican food is one of my favorite food styles aside from Asian food. I probably cook Mexican cuisine at least once a week since I love it so much!

And a bonus — This meal can be prepared in 30 minutes or less!

Gluten Free Baked Turkey Taquitos

I have never baked homemade taquitos before and wanted to give it a try. Baked taquitos are healthier and create less of a mess in your kitchen than when you are frying them.

Serve with sour cream and / or guacamole or even a Sweet & sour cranberry dipping sauce. Leftover chicken or a rotisserie chicken is perfect for the filling… or in my case leftover Turkey.

Since my kids and I are intolerant to chicken, I make A LOT of turkeys over the course of a year and whatever you usually make with chicken, I substitute with Turkey, hence Turkey Taquitos. 🙂

One-pot Gluten Free Turkey Alfredo

I have not been feeling well the last week. I have head congestion that just won’t seem to go away. But no matter how I feel, I am still at it in the kitchen making dinner for everyone, EVERY.SINGLE.NIGHT.

Last night I decided that I was going to use up the last of the Thanksgiving turkey leftovers and thought a pasta dinner would be the way to go.

Don’t get me wrong, I LOVE turkey leftovers… but after a week of eating Turkey for dinner — I am kinda done and would like something else regardless of how creative I can get.

Making a dinner that only requires one-pot makes for easy clean up! And not to mention a simple dinner prep.

My husband was on a Vegan meal kick for awhile. I kept looking for new dinner ideas and came across this Potato and Chickpea Curry recipe. It sounded wonderful so I took out the Crockpot and got to it. By making the Potato and Chickpea Curry in the Crockpot it allowed me to prep very little, then set it and walk away until this vegan/gluten free dinner was ready much later in the day.

Gluten Free Korean Beef and Veggies Rice Bowl

Korean Beef and Veggies Rice Bowl | Small Town Living in Nevada

My husband walked into the kitchen from work and immediately said to me, “What are you experimenting on now?” He knows me oh too well. And it doesn’t phase him nor my kids that I am constantly photographing my food before I join them for a meal.

Nevertheless, I bought 5 pounds of hamburger and ziploc bagged 1 pound bags of hamburger. I set aside a pound to make dinner but wanted to make something different with the meat, not your usual Cheeseburgers or Meat Loaf.

I came across a recipe for Korean Beef and was like, yeah that looks good, but noticed there wasn’t any vegetables included. Well that has NEVER stopped me before; wasn’t gonna stop me now. I grabbed practically the last of my string beans from my garden and some organic carrots out of the fridge and diced them up to add to my adapted Korean Beef dish for dinner.

Well as everyone was enjoying dinner, my husband says, “This is really good!” And my daughter had 3 helpings because she thought it was delicious! I would say that is a dinner success!
