Gluten free dark chocolate chip cookies

I am always trying to figure out that perfect cookie recipe since going gluten free. I think my search is finally over. I hit the jackpot and literally can’t stop eating these cookies. I think I am on number 4!

I love crispy cookies and my husband likes soft cookies. My first several batches I baked the cookies for 12 minutes and they crisped up nicely! Now I am baking the remainder of the dough for 10 minutes so it is more of a soft batch cookie that my husband loves. My kids, they can careless if their cookies are crispy of soft — they are just happy I am making cookies!

Gluten Free Pumpkin Pie with a sweet pie crust

Pumpkin Pie

When I made my Gluten Free Cuccidati Cookies I had a lot of dough leftover. And since the dough rolls out like a Pastry Dough I decided to experiment and see what it would taste like as a pie crust shell. So I made a Gluten Free Pumpkin Pie using said dough and prayed it would taste at least ok on Thanksgiving. Cause everyone knows that Thanksgiving isn’t really the right place to experiment with food recipes when everyone is expecting their Traditional yummy recipes.

Nevertheless, I experimented and the crust was better than ok.. it was delicious! I stressed for no reason, LOL.

Gluten Free Sopapillas

Fried Cinnamon Sugar Tortillas

My mom always made my brother and I Sopapillas growing up. Ok Sopapillas is a fancy name for a Deep-Fried Flour Tortilla, Sprinkled with Sugar and Cinnamon. Around Halloween she would carve the tortilla to look like a pumpkin which was really cool.

Nevertheless, now with gluten free tortillas available at the grocery store I no longer need to make these with Corn Tortillas and can actually use a Gluten Free Flour Tortilla. YAY!

It is just so easy and quick — Just fry up the tortilla then sprinkle with a Cinnamon-Sugar mixture and then top with a dollop of whipping cream drizzled with honey!

Glaze (Dairy Free )

When you want to glaze cookies or donuts this is the best recipe. If you don’t have almond milk you can use regular milk or any milk you would like.

Glaze (Dairy Free )

Ingredients:

1 lb powdered sugar
1/2 cup almond milk
Candied Sprinkles (Optional)

Directions:

Glaze

Mix together in a medium sized bowl the powdered sugar and almond milk and set aside.

I have been baking non-stop for HOURS and all so my kids can contribute to their Halloween parties at school. I made my daughter Pumpkin Muffins with Cream Cheese Frosting and my younger son Brownie cupcakes topped with the leftover Cream Cheese Frosting. They came out quite cute, but my favorites was making the Pumpkin Doughnuts.

I came across this pumpkin doughnut recipe on Pinterest and couldn’t wait to get doughnut pans . My mom surprised me a few weeks back with pans so I couldn’t wait to get started on trying different doughnuts especially since doughnuts are one of several foods I quite miss about living a gluten free lifestyle. Well, not any more!

The original recipe calls for a Cinnamon Sugar dusting and while that is fine and dandy I went a step farther and just glazed them instead.

This is one tasty doughnut… it is kid, husband and of course approved by me as well!

Chocolate Doughnut Glaze

So I had experimented with making doughnuts for the first time ever the other day. I made Gluten Free Apple Cider Doughnuts and while they were awesome in their own right I wanted to dip them in chocolate just to see if they could taste even better. Yeah, it was taste-bud overload!

Chocolate Doughnut Glaze

Glazes 2 dozen doughnuts

Ingredients:

  • 1/2 cup butter
  • 1/4 cup milk
  • 1 tablespoon light corn syrup or honey
  • 2 teaspoons vanilla extract
  • 4 ounces dark chocolate chips
  • 2 cups confectioners’ sugar

Directions:

  1. Combine butter, milk, corn syrup, and vanilla in medium saucepan and heat over medium heat until butter is melted.
  2. Decrease the heat to low, add the chocolate, and whisk until melted.
  3. Turn off heat, add the powdered sugar, and whisk until smooth.
  4. Place the mixture over a bowl of warm water and dip the doughnuts immediately.
  5. Allow glaze to set for 30-60 minutes before serving.

I had really been missing doughnuts for some reason or another and for good reason. I hadn’t had a doughnut in almost 2 years and then my mom goes and buy my kids and I gluten free powdered doughnuts back in June.

Well, no where in my little town do they sell gluten free doughnuts. So the next best thing was to buy doughnut pans and then experiment.

I saw a recipe for Apple Cider Doughnuts sprinkled with cinnamon and sugar and thought why not lets try it!

My brother was having a 40th birthday celebration and he wanted my aunt to make him a carrot cake for his party. Well in order for my kids and I to be able to join in on dessert, I had to make us a gluten free carrot cake.

I couldn’t believe how moist and airy this cake was. And some of the party goers wanted to sample what gluten free “tasted like” and said they thought my cake was actually tastier and even moister than the “regular wheat” carrot cake that was served.

Gluten Free Ice Cream Sandwiches

My family was invited over to my friend’s home for a birthday party. I asked her what they were serving for dessert and I was told ice cream sandwiches. My response was great, I will try and make a gluten free version and bring those over for my kids.

While it was rather easy to make… the ice cream itself was melting pretty fast once I was assembling the sandwiches. And since it was melting I threw a ice pack in with the sandwiches so the remainder of the ice cream wouldn’t melt while we were driving.

All in all the ice cream sandwiches came out quite tasty… and even though they were a tad melted the kids didn’t even care.
