Homemade Gluten Free Turkey Nuggets

A couple of weeks ago I cut up a raw turkey and used one of the turkey breasts to make Gluten Free Turkey nuggets served with my cranberry dipping sauce!

I dredged the nuggets through egg and a gluten free bread crumbs mixed with smashed Ruffles potato chips as my breading. Yep, it was a tasty concoction!!

Gluten Free Baked Turkey Taquitos

I have never baked homemade taquitos before and wanted to give it a try. Baked taquitos are healthier and create less of a mess in your kitchen than when you are frying them.

Serve with sour cream and / or guacamole or even a Sweet & sour cranberry dipping sauce. Leftover chicken or a rotisserie chicken is perfect for the filling… or in my case leftover Turkey.

Since my kids and I are intolerant to chicken, I make A LOT of turkeys over the course of a year and whatever you usually make with chicken, I substitute with Turkey, hence Turkey Taquitos. 🙂

Gluten Free Fish Cakes

Fish Cake

I have never tried making Fish Cakes before and don’t know why I haven’t tried them sooner. They are quite easy to make and so tasty!

Fish Cakes are quite versatile and can be served as a snack, in a sandwich, or even as an appetizer or a side for a party.

My kids and husband thought they were great. And my husband even took the leftovers to work for lunch the next day. So I say that is a win-win dinner for Mama.

Gluten Free Tempura Fried Calamari

I love fried calamari! Since I was diagnosed gluten intolerant, I have not been able to really patron many Italian restaurants let alone order fried calamari. But I found the Walmart near me carries a 1 pound bag for $5. I cannot believe how reasonable that is! The calamari is already cleaned and cut which is even better! Nevertheless, I made up a tempura batter, dipped the calamari in and fried them up to a crispy goodness!

Gluten Free Tempura Fried Calamari

Ingredients

  • 1 lb bag of calamari, cleaned and cut
  • 1 cup arrowroot
  • 1 cup sweet rice flour
  • 1 cup white rice flour
  • 3 eggs
  • 2-3 cups ice cold water (depends on how thin you want batter)
  • Oil for frying

Directions

  1. Heat oil in a deep pot or fryer to 375º F.
  2. In a large bowl mix arrowroot, sweet rice, white rice, eggs and water together. Mix thoroughly.
  3. In batches – dredge calamari in batter, then place in hot oil.
  4. Fry 2-3 minutes or until golden and crispy.
  5. Drain on a paper towel lined plate. Transfer to a ‘Warm’ oven until all calamari is done.
  6. Repeat frying steps until all calamari is done.

Beef Nachos made from leftovers

I made tacos the other night and had seasoned ground beef and smashed avocados leftover that needed to be used up. Tonight felt like a fun night for Nachos because who doesn’t like to transform leftovers into something different and just as tasty?

For my chips, I grabbed a stack of corn tortillas, quartered them and then fried them up so I could make the nachos. My daughter helped and was having a great time ‘cooking’ with me.

Here’s what will be needed:

  • Taco meat (I used leftover seasoned ground beef)
  • Tortilla chips (which I made homemade from my Tortilla Chip Recipe)
  • Shredded cheese
  • Beans, tomatoes, green onions, diced avocado…whatever you like
  • Toppings- Sour cream, salsa, guacamole, Sriracha sauce, etc

I greased a cookie sheet and then started to layer my ingredients: beginning by spreading out a layer of chips, next layered with some shredded cheese. Next I placed a layer of black beans, and another sprinkle of cheese and then a layer of seasoned beef topped with more shredded cheese.

Pop the cookie sheet into a 500º F oven for about 4 minutes or until the cheese is completely melted.

Remove from oven and serve with your choice toppings.

Fast, simple and definitely a crowd pleaser — and a great way to use up leftovers in the fridge!

This is by far the easiest meal and the most tastiest!

I love avocados, and have never stuffed them before. I really consider avocados to be one of my favorite foods – they’re delicious and not to mention good for you. I am trying hard to cut back on my carbs, probably not winning at the attempts however, definitely trying.

I wanted to make something refreshing, healthy and low-carb. So after making the Turkey Salad, I stuffed the turkey mixture into a very ripe avocado half. Lets just say lunch was gone within minutes because it was just too good to savor!

Simple Deviled Eggs

With Memorial Day around the corner and everyone looking to have people over for barbecues, what better appetizer to serve than Deviled Eggs. And of course you’ll probably have to make a double recipe just because these little beauties disappears fast!

I am not a huge mustard fan and most deviled egg recipes call for mustard. Not the way I make them. They are just pure and simple and oh so yummy. I have been known to devour a dozen of these in one sitting – OK not really, but I can down quite a few in one sitting that is for sure.

Deviled eggs are easy to make and are always a hit at any barbecue or picnic gathering. To make them extra pretty, just pipe the egg yolk filling with a star-tip. I use Wilton’s Dessert Decorator Plus for EVERYTHING i need to pipe!
