There was a Garlic festival at my house….

MojitoSo we had friends over for dinner and a movie – and Frozen Mojitos. I have been nursing my mojito for hours, LOL. It is strong on the Barcardi 151! My husband bought Cocktail Rx Freezer Cocktail mix – Mojito Flavor that comes in a 19.5-Ounce Bucket. Just freeze over night, pour in a glass, add some crushed mint and you have a yummy drink! Except my drink is living on foreverrrrrr……………

For dinner I decided on Shrimp Scampi, bruschetta, Garlic Bread and Crab Cakes with a garlic aoli sauce. So the vampires are staying away tonight!!!

After making more cookies and all the prep work for dinner – I still haven’t finished my drink… I am such a light weight.

AND I have no idea how I made dinner, but everyone Oohed and awed! No, just kidding I didn’t cook tipsy or even drunk, but it was really D-Lish!

Gluten Free Beer….

So I was making cookies with peanut butter chips and mini chocolate chips being susie homemaker. Then insert my husband. He went to the grocery store and came back with an infinity of mini pies filled with gluten (that I can’t eat)… and two 6-packs of beers. He hands me a beer and says have a beer with me — I bought you gluten free. HUH? When does that happen?? Anyhow, I haven’t had drank beer in years – like more than 15 years. If I didn’t know better I think he was trying to get me drunk, LOL!

Usually with alcohol I would get awfully sick. So sick that I would be throwing up for hours on end and just miserable. So I basically gave up drinking all together. The euphoria of being tipsy didn’t out way the awful feeling of puking for 8 hours straight. So it was a no brainer. Now fast forward to present day… I am gluten intolerant. Probably why I never did well drinking beer or other alcohol’s to begin with. So cheers, I am gonna have my first beer in 15 years and of all things check this out RedBridge it is made by Anheuser-Busch. AND it actually tastes pretty decent.

From what I can tell — and honestly I am not a beer aficionado by any means, but this is a full-bodied gluten-free lager brewed from sorghum and an American Amber / Red Lager with an ABV of 4.00%.

So I finished my beer. Feeling a little something. Not drunk, but here’s hoping I sleep in my bed tonight and not in the bathroom!

Crockpot New England Clam Chowder

Every time my family and I have gone out to eat the menus have Clam Chowder on it. However, every time I ask if it contains gluten I am told it does. I am on a mission – I want clam chowder SO I MADE MY OWN….

ClamChowderCrockpot New England Clam Chowder

Ingredients

1/2 cup butter
1 medium onion, finely diced
2 celery stalks trimmed, quartered lengthwise, then sliced into 1/4-inch pieces
1/4 cup + 1 TBSP gluten free all-purpose flour
2 cups vegetable stock
1 (28 ounce) can whole baby clams in juice
2 cups heavy cream
1 tsp Salt
Freshly ground black pepper to taste

Directions

Heat 3 TBSP of the butter in a large pot over medium-high heat. Add the onion and celery and sauté until softened, mixing often. Stir in the flour to distribute evenly.

Transfer sautéed onions and celery to a crockpot.

Add the stock, juice and clams, as well as cream and remainder of butte. Then stir to combine.

Place crockpot on high or 4-hrs depending on what type of machine you have.

Hallelujah… it blew on through… I can breathe!

I am so glad I can have my windows open finally. The house was soooooo stuffy and the kids didn’t want to go outside cause they didn’t want to smell the smoke. I think everyone was antsy and on edge because of the lack of being outside today.

The kids said they never went outside while at school. Which is great for health reasons and which is bad due to pent up energy.

I was looking at the Air Quality site and was happy to see we are back in the “Good” category as of 3pm today, bounced back around 4pm — but has been good since 5pm on. But my eyes are itchy and I have been sneezing all day. And my throat feels raw most likely from all the sneezing. Hopefully by tomorrow with the fresh air I will be feeling better. Fingers crossed. Thank goodness it is Friday and I can try to sleep in tomorrow.

The Air Quality is harmful to our health…

There has been a fire raging north of the community of Pollock Pines California called the King Fire. Which is about 70 miles from where I live… and believe me — driving anywhere from my house, you end up driving through the mountains so it takes us about an hour and a half to drive to Pollock Pines. Nevertheless, my little Nevada community is becoming very affected by this fire. Our air quality went from Good to Very Unhealthy in 4 days flat.

I am concerned about my kids – I hope their school forbids them outdoor recess tomorrow. I am concerned about my chickens. What the heck should I do about my chickens? I guess if the Air Quality continues to fall in the Unhealthy Range than I need to look for my air purifiers to keep the good air flow in my home. And of course this had to occur during Indian Summer of all times. Especially when you want to leave your windows open at night to let the cold air in throughout the evening and then close up everything in the morning to keep the cool air trapped during the day. Dang, tomorrow is going to be a hot house to deal with.

I am just afraid we will be in a deja vu episode all over again. A repeat from last year.

Last year we were stuck in our homes for at least a month if not longer from the Yosemite Rim Fire of 2013 due to unsafe air quality. It started on August 17th and wasn’t fully contained until the end of October. No one was allowed outside. Sports were cancelled… kids had to be dropped off for school at the entrance – not the playground and no outdoor recess. It makes it hard on kids who are use to playing outside every day.

Believe me — my heart goes out to everyone involved in these fires… the firefighters, the emergency crews, the people being evacuated, the animals — the list goes on. And I am lucky I am not in the middle of the chaos of such things. But we are and will have to deal with the unhealthy air that comes with such fires.

Homemade Gluten Free Pizza

Tonight I went the easy route and pulled udi’s pizza shells out of the freezer and added an abundance of toppings to create the perfect Gluten Free Pizzas for dinner tonight. Udi’s is usually my go to shell. It is quick and easy and basically the only one I can find at the grocery store… and it is pretty good, too. Now I will say it isn’t as good as old fashion pizza — but it makes do and the kids like it, a lot.

I made two mozzarella cheese pizzas then topped one with pepperoni, fresh slices of tomato and dollops of ricotta cheese.

The other pizza had cubed pork with pineapple. And lets just say all but one slice of each is left!

Ingredients

1 10″ Udi’s or other gluten free brand pizza crust
1/2 c. pizza marinara sauce
1/2 c. mozzarella
1/4 c. pepperoni
1 small tomato sliced
1/2 cup ricotta cheese

Preheat oven to 400° F.
Bake time: 8 – 10 minutes

Spread marinara sauce onto crust; layer with Mozzarella, pepperoni and tomatoes. Then top with 5 dollops of ricotta cheese. Bake until cheese is melted or until crust is crispy and not soggy and cheese is nice and golden. For about 10 minutes.

Gluten Free Pork Mozzarella

I was craving what all I can say is Chicken Parmigiana, but of course I can’t have chicken and well I was all out of parmesan cheese. Regardless of my predicament I decided I was going to make something similar. I was defrosting a pork shoulder roast, sliced it up into 7 steaks and began the process of making a Gluten Free Pork Mozzarella. My Italian grandmother (rest in peace) would be proud of my off the cuff Italian dinner tonight.

Homemade Coleslaw

Ingredients:

1/2 cup mayonnaise
1/3 cup sugar
1/4 cup whole milk
1/4 cup buttermilk
2 -1/2 tablespoons lemon juice
1 tablespoons white vinegar
1/2 teaspoon salt
cracked pepper to taste
1 pound bag shredded cabbage and carrot mix

Instructions:

To make dressing:
Combine the mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt, and pepper in a large bowl and beat until smooth.

Add the bag of cabbage.
Cover and refrigerate for at least 1 hour before serving.

Serves 5-7

Gluten Free Fried Rice

My husband loves CalRose White Rice. It may not be as nutritious as brown rice – but that is what he likes and what I make most nights. Yet I have as of late not realized how many containers of leftover rice I had in the fridge.

So tonight I decided to make fried rice with the leftovers and so glad I did because it was oh so good!

Gluten Free Teriyaki BBQ glaze

Teriyaki Sauce

Last night I was thinking Teriyaki BBQ fish would be ideal for dinner. I don’t ever BBQ fish on the grill, that is my husband’s thing. Yet he gets home late from work every night monday – friday. My first mistake was thinking it would be a fast meal… second I forgot what time he gets home. Lets just say he smokes the fish and then BBQ’s the fish and it takes a good hour plus to make this delicious dinner. Needless to say we ate dinner at 8pm.

Hopefully next time I will remember this is a weekend meal and not something for the weeknight.

Nevertheless, I have come up with a really tasty Gluten Free version of a Teriyaki Sauce BBQ Glaze.
