I don’t think there is a specific time of year when you are limited to making a smoothie. A smoothie can be made whenever you want one. My daughter asked if we could break out the new Kitchenaid Blender to make some yogurt smoothies and I was “Of Course!”

The smoothies are delicious, creamy and nice and healthy so I don’t mind my kids asking for such a treat.

Ingredients

  • 6 oz peach flavored yogurt
  • 6 oz blueberry flavored yogurt
  • 1 cup Milk
  • 1 tablespoon Honey
  •  Ice

Preparation Instructions

Place ingredients into a blender. Blend until smooth on crush ice mode. Taste it for sweetness and add more honey if needed.

Pour, drink and enjoy!

I am not the best baker in my opinion. And I really have never been one to like to make pie crusts. If anything I don’t like crust because if it isn’t flaky thin — I will turn my nose up to it. I actually loved using Pilsbury’s pre-made pie crust cause it is the exact thin and flaky that I have always loved. But now being gluten free changed my way of baking altogether.

I have been on the search for that perfect crust and I think I have found it.

Beef Chow Mein with Rice Stick Noodles

So I have been literally sick for a week. And today was the 1st day in a week that I actually felt well enough to cook dinner. So I decided Chow Mein was something that really sounded good and not too complicated to wear me out.

I went through the refrigerator and freezer and pulled out food that would work well for my dish. There was some steak leftover from dinner a few nights ago that I diced up and placed in the chow mien marinade. Plus, there was a 1/2 a yellow onion that looked like it would be a good addition to my concoction!

I scoured the freezer and found stir fry veggies and some frozen peas, score!

Then it was either vermicelli rice noodles or pad thai rice stick noodles… AND the quick decision was to go with the thicker noodles this time around.

I have been so sick….

My kids have been sick all month for one reason or another. My daughter came up positive for Strep Throat and the next day my youngest was in the doctors with an ear infection. Well my daughters medication had ended on Wednesday of last week and by Friday she was running a high fever and sounded like a barking seal. My husband and I were leaving for Las Vegas on Saturday morning but had to postpone a few hours so I could take my daughter to Urgent Care.

The Doctor told me she still had strep throat which would require her to be on a stronger dose of antibiotics this time around. AND that she also had croup and would have to have an oral steroid.

So my husband and I finally take off to Las Vegas while the kids are being taken care of by my parents. Las Vegas is a 7+ hour drive from where we live — 400+ mile trek. But we have a Prius so the gas alone is way cheaper than any flight we could had gotten.

We were there basically for 1 day literally and that was to see Jeff Dunham perform at Planet Hollywood on Sunday afternoon. However, by Sunday night I wasn’t feeling too well… I was having stomach issues. For our car ride home Monday — I was in full blown chills.

Tuesday my Father took me to Urgent Care since my doctor’s office was booked. I was told I had Strep Throat and a mild case of Bronchitis. Mild Case my ass… my ribs hurt so bad from coughing it is painful. So they put me on a z-pack I guess is what they call it.

By Wednesday the 17th my son’s are presenting symptoms now. So I had my parents take them to the doctors … and yep strep throat. My youngest still has a bad fever today.

And my daughter had ran a fever for at least 5 days after being on the new medication. So she missed this entire week from school.

And then there is me. I have been so sick that I was in bed for 5 days straight. This is literally the first time I was able to sit up and turn on my computer and type something out for my Blog.

I can’t remember the last time I was so sick that I was stuck in bed for 5 days if ever. My throat still hurts. My cough is awful and I am all congested — not fun at all.

I hope that we are all well enough for christmas next week. And knock on wood that my husband doesn’t fall ill to this nasty germ bug that is hitting my home hard.

I really like veal yet never buy it. I can’t even tell you the last time I made a dinner with veal or have even been able to order it on a menu. Most veal dishes at a restaurant are dredged in flour and thus not gluten free.

My husband and I are going to Las Vegas for his birthday this weekend and my parents drove up to take care of my kids, home and animals while we are gone. Well, my mother brought up a package of Veal from the Italian Deli Antipastos in San Jose. I was excited and said, “I am making Veal Scallopini!”

Speechless

OMG the wind blew our swing set over (mind you it was staked into the ground!!!!!)

The whole thing landed on my garden fence! I can’t believe this, my kids are going to be devastated! Damn Pineapple Express Storm — I hate you and your 80 mph winds!!! MY Garden fence is TOAST!!! My kids swings and fort is shambles. AGHHHHH I want to cry!!

Walked in the Christmas Parade

This past Saturday, my daughter and I walked in our town’s Annual Christmas Lights Parade with our Girl Scouts Troop. It was so much fun. And believe it or not our float won for Best Youth Float!! I walked the entire 1.3 miles. And even though it was like a 1.5 hr walk it went by really fast — must had been because it was so entertaining. My daughter walked and handed out candy as well as rode in on the float to give the other girls a chance to switch off handing out the goodies!

Christmas Spirit has hit our home!

Yesterday, my husband and his friend Mark put up our Christmas tree. It sat there until the kids got home so the 4 of us could place all the ornaments on. Of course nothing went smoothly and a couple of ornaments got broken but nothing some glue couldn’t fix.

The stockings have been hung. And yes, I LOVE SNOWMEN! Everyone has a snowman stocking that I have collected over the years.

So i guess I am finally in the Christmas Spirit!!

Roasted Turkey with Sage and Rosemary

Thanksgiving all over again….

Being out of town for Thanksgiving is great and bad all rolled into one. Great because I get to see family and relax more. Bad because I don’t get to have leftovers in my fridge. Sooooooooo, I decided to make a Roasted Turkey with all the fixings for our Sunday dinner. And it literally felt like I was putting on a Thanksgiving. I over indulged on the dark meat. The sink was filled with dirty dishes and everyone at my table was stuffed from the wonderful spread.

After I picked all the meat off the bones… I cracked the bones open and am making Bone Broth to can and store in the freezer for later use. Yes, I have been busy in the kitchen today!

Roasted Turkey

The turkey came out extremely moist!! It was perfect – plain and simple. I preheated the oven to 325º F placed my Raw 10.5 pound Turkey in a Turkey Roaster with a dome lid for an hour and 15 minutes, then removed the lid and baked the turkey for another 1.5 hours. I basted the turkey twice in the 2-3/4 hours I baked it.

Roasted Turkey with Sage and Rosemary

  • 10.5 pound Turkey
  • 1/2 cup butter
  • Sage
  • Rosemary

Take your butter stick and cut in half. Throw 1/2 a stick of butter into the cavity of the bird with a good, liberal sprinkle of sage and rosemary. Take the other 1/2 of the butter and place into a microwave safe bowl with more sage and rosemary. Place in the microwave for 45 seconds or until melted. Stir to combine and brush all over the top of your turkey.

Put the turkey on a rack in a large covered roasting pan, and into the oven and bake at 325° for 2-3/4 hrs or until a meat thermometer reads 170° for the turkey.  After 1 hr remove the lid, baste the turkey, return to the oven leaving the lid off to let the heat crisp the skin for the next 1.5 hours.
