So I have a love affair with sautéed onions and mushrooms. It is true. And my family just doesn’t enjoy my enthusiasm of either vegetable! Nevertheless, I find them perfect together on a swiss cheese burger and couldn’t be happier.

When I lived in Lake Tahoe I use to frequent a restaurant that had a Swiss Mushroom Burger on their menu that was topped with sour cream. It was called Alpine Burger and it was WONDERFUL. This is my rendition of their burger with the addition of grilled onions.

There is nothing difficult about making this burger.  To cook the burger patties, barbecue them up on the grill or fry them in a skillet. Then top them with Swiss cheese during the last few minutes so the cheese melts perfectly.  While the burgers are cooking, sauté sliced mushrooms and onions.

Place the burgers on a gluten free bun or serve open faced topped with sautéed mushrooms and onions, and then topped with a dollop of sour cream!

Gluten Free Philly Cheesesteak

I can still remember sitting at Pat’s King of Steaks® in Philadelphia years ago AND loving every bite of my Cheesesteak Sandwich and thinking I need their recipe!! Anyway, now I have to make mine gluten free but it is still loaded with grilled onions, red peppers, steak and smothered in Cheez Whiz!

The other night I made Cheesesteaks for dinner! I haven’t made this meal in a very long time. Of course I can’t use a traditional Italian Gluten filled Roll, but that is ok.  ANDDDDDD the recipe I follow is non-other than Pat’s King of Steaks that I acquired eons ago from the restaurant’s website before they took the recipe off the internet.

Now I probably use more Cheez Whiz than most and make this a messy, but delicious sandwich! But you can use as much or as little of any and all ingredients to build your perfect sandwich!

Simple Deviled Eggs

With Memorial Day around the corner and everyone looking to have people over for barbecues, what better appetizer to serve than Deviled Eggs. And of course you’ll probably have to make a double recipe just because these little beauties disappears fast!

I am not a huge mustard fan and most deviled egg recipes call for mustard. Not the way I make them. They are just pure and simple and oh so yummy. I have been known to devour a dozen of these in one sitting – OK not really, but I can down quite a few in one sitting that is for sure.

Deviled eggs are easy to make and are always a hit at any barbecue or picnic gathering. To make them extra pretty, just pipe the egg yolk filling with a star-tip. I use Wilton’s Dessert Decorator Plus for EVERYTHING i need to pipe!

Gluten Free Lumpia made with Rice Wrappers

I use to make Lumpia (Filipino Egg Rolls) A LOT years ago before my kids and I were diagnosed gluten intolerant. Then once we were diagnosed I stopped making them all together. Then the other day I thought what if I made them with the rice wrappers instead.

It was a little more work, but definitely worth it. Make them in advance since they hold a lot of water and basically will fry better if you let them dry out first. And of course you don’t want much of the water content in the sizzling oil when trying to fry them.

Many of my best friends growing up were Filipino and going to their homes for dinner was just wonderful. And having Lumpias was definitely a treat!

Gluten Free Steak Taco Salad

Ok, I have to admit — I truly have old favorites that my family eats over and over again — And Taco Salad is one of those meals. And with today being Cinco De Mayo — why not make this filling favorite.

I like to use ground turkey, ground beef or steak – depending on what I have one hand. I brown onions then the meat and season with Trader’s Joes Taco Seasoning.

Once the onions are limp and the meat is cooked add two cups water. Let simmer until nearly all the water has evaporated.

Wash and spin dry romaine lettuce then cut into bit size pieces. Add lettuce to a large bowl layered with tomatoes, cheese and avocados. Then add cooked meat to the salad.

Toss and serve immediately with sour cream and chips.
