I am always trying out chicken recipes since I can always substitute with turkey because of our allergy to chicken. And the easier the recipe the better as long as it is tasty! I came across a recipe not too long ago that sounded great and I wanted to try it out… however I’m the type that can never stick to the original recipe without changing it up or adding to it. I just find it is way too hard unfortunately to keep to the original.

Nevertheless, my version came out really tasty and the turkey came out very tender and I savored every bite and even went back for seconds!

My brother was having a 40th birthday celebration and he wanted my aunt to make him a carrot cake for his party. Well in order for my kids and I to be able to join in on dessert, I had to make us a gluten free carrot cake.

I couldn’t believe how moist and airy this cake was. And some of the party goers wanted to sample what gluten free “tasted like” and said they thought my cake was actually tastier and even moister than the “regular wheat” carrot cake that was served.

So I wanted to try a different bubble solution and was quite happy with the results even though the cornstarch and baking powder were weird to work with and made the solution milky in color. Nevertheless, this made a nice large bubble for the kids to happily squeal at and that is all that mattered to me!

Homemade Bubble SolutionI placed all the ingredients into a cleaned out gallon milk container and shook it to mix all the ingredients together… however it created A LOT of foam in the jug. Regardless it made really nice bubbles!

Ingredients:

6 cups water
1/2 cup dish soap
1/2 cup cornstarch
1 tbsp baking powder
1tbsp glycerin

Directions:

Place everything into a gallon jug and mix thoroughly.

Last night I was headed out to a Bridal Shower with my mother and daughter but before I left I made sure the boys and my father had dinner. My mom had bought boneless pork chops so I grab the package out of the fridge and started to make an apple chutney to top the chops with.

I hope they appreciated the work I put into dinner that night cause Lord knows they would had eaten cereal otherwise, LOL.

Every once in awhile I like egg salad. I don’t know why I don’t eat it more often since it is quite easy to make. Even though I am not very fond of mustard doesn’t mean you can’t add mustard to your recipe. Nevertheless, I always have a lot of eggs on hand and rightly so with 10 chickens at home — so might as well make some egg salad since all those eggs I have are taking up so much space in my fridge.

Back in the Bay Area

The kids and I are back in the Bay Area for some fun in the sun before the kids head back to school in a few weeks. We will be in town for a couple of weeks and are going to try and have as much fun as we can.

We arrived on Monday and have been just relaxing since. My parents have a pool so the kids have been having pool days every day since we have been here and loving every minute.

I will have to squeeze in a beach day, though, cause you can’t travel to the Bay Area and not go to the Beach. That would just be sacrilege otherwise.

Tonight my mother, daughter and I are attending a bridal shower at my aunt’s home for her daughter-in-law to be. My cousin is getting married next month and we were included in on the festivities to help celebrate the union. I hadn’t been to a Bridal Shower in years and thought it was quite fun shopping yesterday for gifts. I really hope she likes what we got her.

My mom and I are taking the kids to Six Flags Discovery Kingdom in Vallejo tomorrow (Friday) and I am kinda excited since none of us have ever been there before. I noticed on the map they have a butterfly habitat… now that totally got my attention and I can’t wait to see that!

If you have been to Six Flags Discovery Kingdom before, what would you recommend seeing for an 8, 6 and 4 year old?

Then a week from Saturday my brother is having a 40th birthday party that I will get to see many family members and a lot of friends that I don’t normally see due to me living in Nevada. So I can’t wait to see everyone. My husband will be driving up to attend the party as well and then as a family we will be driving back home together the next day.

Nevertheless… I am gonna try to have as much fun as we can while we are here. Will post photos later!

Gluten Free Crockpot Chili

So if he wants chili, then I have to make it homemade for him with either Pinto Beans or Black Beans. And of course the perfect chili recipe calls for a crockpot. It is basically the easiest way to get that slow simmering stovetop chili richness.
