I made a Gluten Free BLT for lunch today. I wanted to try intertwining the bacon and was impressed with how it came out…. Think I may do this from now on but will have to cut the bacon strips in half so the ‘bacon patty’ isn’t so large next time.

Layer Salad
Growing up my mother made her 24-hour salad that I always loved. Now I make this salad and my daughter just loves it as well.
But this is the salad that everyone always asks me to make when I am attending a Potluck or Barbecue. Since we were attending my son’s Cub Scout Rank Ceremony’s barbecue, I decided to make this salad as my contribution to the barbecue.
It has layers of lettuce, mayo, parmesan cheese, sugar, water chestnuts, peas, bacon, onions…. Mmmm, I think I need to make another batch for my own enjoyment. It is one of my favorite salads!
Gluten Free Potatoes in a Coconut Curry sauce
So my husband has been throwing around the idea of going vegan. I am not certain that is something I want to do. Can you imagine vegan AND gluten-free?
Anyhow, he came across a recipe from The Gourmet Vegetarian Slow Cooker cook book and really wanted to try out a recipe.
Of course I never can follow recipes to the ‘T.’ I just always have to do it my way and it usually always comes out great. Anyhow, this is my version and I hope you like it.
Our summer has come to an end…..
Summer is officially coming to an end. While I am sad, my kids are actually glad to be back at school which gives me more time to catch up things I have neglected over the last few months.
But seriously (sniff, sniff) summer went by way too fast!!
My kids were out of school just 3 days when we headed to Seacliff Beach in Aptos, CA. I love, love, love the beach!! Living 6-hours away from the ocean we get out there maybe once or twice a year if we are lucky. And this year we were lucky and were able to actually go twice – once in June and then again in August!!
The second time we were at Seacliff — it was AMAZING!! My mother, kids and I had such an extraordinary time at Seacliff State Beach today thanks to my cousins and their kiddos. It was an awesome adventure that included Whales, Dolphins, Seals, and Otters galore! I felt like a kid squealing at the site of the whales. This sighting was MORE EXCITING than when we paid to whale watch in Maui back in April. Oh my gosh it was just jaw dropping and ALL A FREE NATURE SHOW for all at the beach.
Kale & Onion Waffle Iron Omelette
Most days I have an over abundance of eggs in my fridge that ALWAYS need to be eaten. And since I had leftover Kale as well, I decided to make an omelette of melted cheese, chopped kale and sautéed onions.
I chopped the onions up then placed them in a sauté pan with a little olive oil until they were translucent. Next I took kale leaves off their stem and chopped them up with the onions and a 1/4 cup of shredded cheese in food processor and then added the eggs and set the food processor on low for 30 seconds.
When the omelette mixture was ready, I sprayed the waffle iron with cooking spray and added about a cup of egg mixture to the iron, closed the lid and let the omelette process to begin.
Yeah Mama rocks!
Veggie Beef Cheeseburger
I am one of those moms that want my family to have veggies with every dinner regardless of what we are eating. The other night the kids wanted hamburgers for dinner. Most times the only veggie they would get with a hamburger would be a piece of lettuce, however, I wanted them to eat more than that, so I pulled out the bag of frozen veggies. I chopped the veggies up in the food processor then added them to the hamburger meat. Definitely not your typical burger, but it was quite tasty, in my opinion, and the kids ate every bite up, too. AND it didn’t hurt that I made tater tots as our side so the family was all round happy!
Homemade Maple-flavored Syrup
One weekend I was making pancakes for everyone then I realized I didn’t have enough pancake syrup for all of us to share, so I decided to make my own syrup.
After cooking a batch, the syrup was watery but very flavorful. However, it will totally thicken up once it cools down. And after you make a batch of syrup, you won’t want to buy syrup from the grocery store again!
And don’t try to double this recipe, because the recipe won’t work… the ‘chemical magic’ unfortunately will be against you. So one batch at a time, only.

Gluten Free Gnocchi with Alfredo sauce accompanied by a GF Caesar Salad is what I made for my family in about 15-20 minutes if that.
I came across Corabella’s rice and potato gnocchi’s that were gluten-free at the grocery outlet yesterday. I bought 3 boxes at $1.99/box. And have to say they were very good and paired well with a gluten free Caesar Salad for dinner!
The down side to the Grocery Outlet is their products don’t stay around for long, so I might have to go back and buy a few more packages to stock up on.
Gluten Free Home-Style Turkey Meatloaf

My daughter is a HUGE fan of Meatloaf. I get heartburn from cooked tomatoes that includes ketchup and barbeque sauce. Basically anything that contains cooked tomatoes is not my friend. However, I will make meatloaf and bare the pain because my daughter loves my meatloaf. That has to be love, right?
