So my kids thought I was making chocolate pancakes and got all excited, LOL. I had to explain that I was making Buckwheat Pancakes not chocolate. Surprising they weren’t sad about not getting chocolate ones as they hoped.

Buckwheat gives these pancakes an incredible flavor. This buckwheat pancake recipe makes very delicious, yet thick pancakes. If you want something lighter, I suggest adding more milk to thin the batter out. Otherwise this batter comes out thick like cake batter.

I injured my finger on Wednesday

On Wednesday I noticed the kids had moved my husband’s weights around on the back porch where he keeps his weight bench and weights. It looked iffy like someone could possibly get hurt so I decided I was going to tidy up and move the weights where they needed to be placed. As I was moving the weight bench a dumb bell that had 20 lb weights on each side some how rolled off the porch and in the process smashing my finger and split it open. So just the one side of the 20 lb weight smashed my finger wide open! AND it took forever to stop the bleeding. For the longest time my finger just killed me and was totally throbbing.

I have had a bazillion clothes to fold between then and now and it has been a really slow process of getting everything folded. A challenge to say the least. Using the mouse hurts… and texting is getting better. My husband thinks I possibly needed stitches and that my finger probably had been broken as well.

Don’t get me wrong, my finger still hurts. But I am doing a lot more. I have a rubber finger protector covering my finger so I can wash my hands and basically wash dishes without feeling like the bandage will get soaked or gross from something.

12019143_10206212338761412_1019077949_oThen I went to the store and got some fancy jewelry since I kept banging my finger on stuff. Now I feel A LOT better.

2 days later and I still can’t touch my finger. It hurts even with the slightest touch. So for now I am really babying it. I still can understand how I did this with that damn 20 lb weight!!

Honey Maple Pancake Syrup

Today the kids didn’t have school and everyone wanted dippy eggs with waffles and of course I was low on syrup. Which isn’t a big deal since I can whip up a batch in 10 minutes or less. But I wanted to try something different and not use corn syrup. I decided to substitute the corn syrup with honey and go from there.

The honey has a strong flavor so I added more maple flavoring to compensate. Needless to say — the syrup came out very tasty!

Gluten Free Black Bean Meatless Burger | Small Town Living in Nevada

I have never made anything like this before and was iffy about making a meatless burger to begin with… Well I will tell you this, I devoured the whole thing! My daughter ate all her dinner and the boys ate almost it all as well. Even my husband said it was good. So I think I stumbled onto something that I will be making more often.

My youngest son wanted hamburgers for dinner, however, I literally have no meat in the house because I need to go grocery shopping. Since I had canned black beans I just went from there and built what I am calling my Black Bean Meatless Burgers.

Not one of my kids complained that they weren’t “Hamburgers” so I guess everyone was satisfied with my meatless burgers.

Gluten Free Stuffed Bell Peppers

When I was growing up my grandmother use to make stuffed bell peppers. Now I will say as a kid I didn’t like the bell peppers, but would devour the stuffing instead. As I grew older I started to like bell peppers and now love the whole meal!

I usually have leftovers and have to say the stuffed bell peppers are even better the next day or the day after that. That is fine with me cause then I know what I will be having for lunch and not have to ponder what should I make.

All though this isn’t quite the exact recipe as my Grandmother’s, I use American Cheese Slices to keep that part of the recipe like the way my Grandma made it. But you can use any cheese for topping your peppers you prefer.

Nevertheless, you will love this recipe as I do.

When I know I will have a very busy morning I tend to pullout the crockpot and do an overnight Oatmeal so breakfast is ready as soon as everyone is up.

My kids love Eggs in a Basket. They actually call them dippy eggs. Normally I make them with toast, but I like to mix it up and use frozen waffles now and then.

This time around I used Gluten Free Cinnamon Eggo Frozen Waffles. Now I have to say the new Gluten Free Eggo Waffles are really tasty especially with the hint of Cinnamon. Almost tastes like you are eating french toast!

Anyhow, Gluten Free Eggs in a Basket Waffle style are a huge hit in my house and there is never a person that has left the table hungry!

I bought a box of Krusteaz Gluten Free Fudge Brownie Mix and there was a photo of Brownie Crackle Cookies on the side. My husband saw it and said, “I love those cookies. Can you make them for me?”

In almost 18 years of being together, you think he’d mention that before. Nope. Nevertheless, I recruited the children and we got down and dirty making my husband his brownie cookies.

I love fried calamari! Since I was diagnosed gluten intolerant, I have not been able to really patron many Italian restaurants let alone order fried calamari.

I purchased a bag of calamari and didn’t want to go the plain route of just making an appetizer and wanted to make it a dinner entree. So I came up with the idea of making calamari tacos. We love fish or even shrimp tacos and this is basically on the same concept.

So, now what did I want to pair it with…. a mango slaw of course!!

Making a bowl for Carson City Empty Bowls

So my daughter has been participating in the Empty Bowls project here in our town. We actually have two Empty Bowls Projects, one in the county we live in and then another in the next town over.

My daughter’s Girl Scout Troop painted bowls for one and then actually made and painted bowls for the other.

If you don’t know what the Empty Bowls Project is, well in a nut shell it is an international movement to help end hunger. Empty Bowls allows participating individuals or groups to paint and/or create bowls which are donated to later be used in serving a simple meal with in at a fundraiser dinner.

I am so proud that we have been involved in this project. My daughter will come full circle when she will be attending the 2nd annual Douglas County Empty Bowls’ event on Sunday, October 4th. This particlular event’s proceeds will benefit the Carson Valley Community Food Closet here in the town we live in.
